Avocado Pudding

Since my little girl very love pudding. So i wake up earlier this morning to make this.

Hopefully she eat much when back from school.


For you knew, Avocado can be bitter if it cook in too hot temperature. So you cannot fry, steam or bake it.

I will explain how to mix it with jelly without make it bitter.

----AVOCADO PUDDING----
Serving : 1 pudding mold

Ingredients :
Avocado Sauce
- 200 gram Avocado (flesh)
- 50 gram Sugar
- 10 gram Milk Powder
- 40 ml Warm Water
Jelly
- 1 pack Jelly (Plant)
- 25 gram Sugar
- 500 ml Water

Method
Avocado Sauce
- Put all ingredients in blender and mix it well.
- Set aside.

Jelly
- Pour 1 pack Jelly and sugar in a cooking pan.
- Pour the water and keep stir it until it cooked.
- Make it cool using fan and keep stir again.
- Pour in pudding mold.
- Chill it in the fridge before serving.

Note : 
-You can add more sugar to make it sweeter.
- Make the jelly as cool as you can to avoid Avocado become bitter when it mix later.

Shiny Saturday

Breakfast for this morning should make something fresh since i have mango and pineapple in my fridge. And also i have rice from last night. So i decide to make Shiny Saturday. Actually it's just fried rice, but i colaborate it with fruit to make it taste fresh.

----SHINY SATURDAY----
Serving : 3 persons

Pineapple/Mango Sauce
Ingredients
- 3 slices of pineapple.
- 1 mango.
Method
- Put all in blender, blend it till smooth.
- Pour the mix in a frying pan.
- Add 1/2 bowl water and 30 gram sugar in.
- Keep stir it till it mix well and bubble show up around the sauce, set aside.

Fried Rice
- Make 3 bowls your fried rice version.

Fried Egg
- Just fry 3 eggs.

Finishing
- In a round plate, put the fried egg in the middle.
- Fill the fried rice in a bowl, press it till it solid.
- Flip the fried rice bowl in the top of the fried rice.
- Pour the pineapple/mango sauce surround the fried egg.
- Cut a fresh cucumber to make slices, put top of the fried rice.
- Shiny Saturday is ready to serve.

Avocado Toast

Morning all!
This morning i check my kitchen. There left some breads and eggs on the table. There avocados and mayonaise in the refrigerator.
So it's came the idea to make a toast for breakfast.

----AVOCADO TOAST----

Serving : 2 Toasts
Ingredients :
- Breads 4 pieces
- Avocado 200 gram (flesh only)
- Milk Water (Milk Powder 10 gram + Warm Water 40 gram)
- Sugar 20 gram
- Egg 1
- Mayonaise 1 table spoon
- Butter/Margarine

Methods
BREAD
- Spread 1 table spoon margarine into the frying pan, put in the breads.
- Roast it by flip up and back till all part slightly cooked.
- Take it out and set aside.
SCRAMBLED EGG
- In a bowl, beat the egg, set aside.
- Spread 1 table spoon margarine into the frying pan.
- Pour the egg on the frying pan, add the mayonaise, stir and mix well.
AVOCADO JAM
- Chopped small 50 gram avocado, set aside.
- Put the rest avocado 150 gram, milk water and sugar in blender.
- Blend it well, set aside.
FINISHING
- Take 1 piece roasted bread, spread the avocado jam.
- Spread the scrambled egg above the avocado jam.
- Spread the chopped avocado above the scrambled egg.
- Spread the avocado jam above the chopped avocado.
- Put 1 piece roasted bread above, the toast ready to serve.
- Repeat the process for the second toast.

The process is simple, right? Even i'm not a chef and i'm sure you can make it within 30 minutes. If you're professional chef, i'm sure you can make it within 15 minutes.
From what i saw, all chef in Korean TV Program "Please Take Care of My Refrigerator" have to able to make a dish within 15 minutes.

Avocado Mousse Cake

AVOCADO MOUSSE CAKE


One of my friend run a fruit shop. I always bought some kind fruits, from orange, watermelon, mango and avocado. So many time i just blend avocado with sugar and cocoa powder.
I want to try something new and apply to a cake.
So i browse many avocado creation, from drink to cake.
And after many experiment, i will explain how to make it.

---AVOCADO MOUSSE CAKE----

Serving : 1 (8 inchi) round cake

CAKE
Ingredients
- Egg 4 pieces ( divide into 4 egg yolks, 4 egg whites)
- Sugar 150 gram
- Flour 120 gram
- Cocoa Powder 25 gram
- Butter/Margarine 160 gram
- Baking powder 10 gram
- Salt 3 gram
- Milk Powder 13 gram
- Warm Water 107 ml
- Vanila Extract 1 table spoon

Methods
- Line 2 x 8 inch (20cm) round cake pan with baking paper.
- Put Milk Powder in a glass and mix with warm water, mix well, set aside.
- Sift Flour, Cocoa Powder, Salt and Baking powder.
- In another bowl, mix Butter with Sugar using Mixer for about 2 minutes (high speed).
- Set to lowest speed, add egg yolks one at a time.
- Put in the flour mixture alternately with milk, start and end with flour mixture.
- In another bowl, beat the white eggs till medium peaks (about 3 minutes).
- Fold half the egg whites to the batter to temper it, then fold in the rest of the egg whites.
- Pour and divide batter in 2 cake pans and bake for 35 minutes. The cake ready when and inserted wooden skewer/toothpick come out clean.
- Let the cake cool for 5 minutes. Loosen the sides with a knife/spatula and invert to flat baking pan and invert again to another flat baking pan.

AVOCADO MOUSSE
Ingredients
- Avocado 225 gram ( flesh)
- Sugar 40 gram
- Milk Powder 5 gram + Warm water 45 ml
- Gelatine 10 gram + Cold water 25 ml
- Whippy Cream 50 gram + Cold water 100 ml

Methods
- Blend avocado, sugar and milk, set aside.
- Mix whippy cream with cold water (about 3 minutes), set aside.
- Mix gelatine and cold water, rest for 10 minutes, then smooth it.
- Melt it above hot water till it thick.
- Pour avocado and gelatine into whippy cream, mix well.
- The avocado mousse ready to use now.

Finishing
- Cut a mica plastic with lenght 60 cm and height 10 cm.
- Wrap round a cake and attach with tape.
- Pour half avocado mousse above the cake, flatten it.
- Put in freezer for 30 minutes, and take it out then.
- Put the 2nd cake above the avocado mousse that already set.
- Pour the half rest avocado mousse above the cake, flatten it.
- Put back in freezer for another 30 minutes.
- Take it out and sprinkle the above part with cocoa powder.
- Unwrap the mica plastic and the cake ready to serve.

Fried Rice Burger


After 5 years passed, i decided to update my lovely blog again. With more fresh contains and fresh spirit.
I will try to share more recipe and experience about cooking or baking. So keep following my blog okey.

Last week i saw Chef Lee Won Il made Rice Burger on Korean TV Program "Please Take Care of My Refrigerator", it gave me inspiration to create my own version.

So i came with the idea to made Fried Rice, firstly as the base / burger.


----FRIED RICE BURGER----


Servings: 2 persons.

Ingredients
For Fried rice
- Cooking oil
- 2 bowls of rice
- 1 spring onion (cut into small pieces)
- 3 cloves garlic (chopped small)
- Soy sauce
- Salt
- Pepper

For burgers
- 1 egg

For Filling
- 2 eggs chicken (fried eyes)
- 1 tomato (thin round slices)
- 1 piece of onion (thin round slices, stir-fry)

Making Fried Rice:
- Heat a frying pan, pour a little cooking oil.
- Put garlic, sprinkle a little salt, stir briefly.
- Put the scallion, stir back.
- Put rice, mix well.
- Pour sweet soy sauce, mix well.
- Sprinkle pepper, mix well.
- Turn off the stove, set aside fried rice that has been so.

Making Burger
- Beat eggs in a bowl, set aside.
- Fill the fried rice into a bowl about 2 cm high.
- Press to flat and set aside.
- Pour and smear eggs on a bowl of yan containing fried rice.
- Heat a frying pan, pour a little cooking oil.
- Put fried rice that is in the bowl in a way reversed.
- Leave about 2 minutes then lift it to the plate.

Settlement
- Take 1 burger and position the flat side facing up.
- Place onion that has been pan-fried over the burger.
- Place tomato slices.
- Put the eggs of the eyes of a cow.
- Put more onions.
- Take 1 more burger and cover.
- Completed and can be enjoyed immediately.

Note
- For contents and toping can be varied at will. Can be added cheese, chilli sauce etc.
